Production Log
Use the production log to keep track of high-cost items purchased in bulk and then processed into portions. This tool is perfect for recording the yield on portion-cut steaks, smoked meats, fish and other high-cost proteins. Recorded figures can be entered into the yield calculator for more accurate costing and yield efficiency
A production log is also helpful for tracking both the bulk purchase item and the yielded menu items included in key item running inventory counts. After processing, bulk items are deducted from the running on hand count and the yielded portions are added to on hand counts.
