The Prime Cost Projection Worksheet is a tool that helps to estimate the prime cost for your existing or proposed restaurant.
First, calculate the Ideal Cost of each menu item by multiplying the cost of each item times the number of items sold for a given period. Add the total menu cost for each item to arrive at the "Ideal" cost of goods sold for the period. Combine the cost of goods sold with your labor cost to arrive at the projected prime cost.
This worksheet, in conjunction with the Menu Cost Worksheet, can help you price your menu for profitability.
Steps for Completing Prime Cost Projections
1. Properly cost out and price each menu item then record each on the worksheet.
2. Enter the estimated period sales for each item on the worksheet.
3. Enter the estimated labor cost for the same period.
