Tom Bruce has been serving the hospitality industry in various capacities (consultant, teacher, chef) for over 30 years. His contributions include several articles for Restaurant Startup & Growth magazine, depicting how Tom has helped several of our members create profitable and manageable menu items as shown in our RecipeMapping department.
Tom is an instructor for American River College. He has taught classes such as Applied Foodservice Sanitation, Purchasing, Basic Cost Control, Advanced Cost Control, Marketing & Legal Aspects. He is certified by the National Restaurant Association, California Restaurant Association and is an accredited vocational instructor through UCLA.
Mr. Bruce is the founding officer of Central Coast Food & Beverage (formerly known as Sacramento Food & Beverage), a consulting company specializing in concept development, operational trouble shooting, progressive training tools and safe food-handling practices. His client base extends across the United States, ranging from sophisticated multi-unit operators to mid-size single unit companies. He has developed extensive working relationships within the restaurant industry and is committed to providing innovative, interactive and cost effective programs.
