The first step to controlling your food and beverage cost is to properly cost out your menu. The Menu Cost Worksheet can be used to list and calculate the cost of ingredients for each menu item.
You can maintain an up-to-date menu cost by periodically updating the raw ingredient cost.
This worksheet, in conjunction with the Ideal Cost worksheet, can be used to calculate the variance between "Ideal Cost" and "Actual Cost".
This template comes in a Microsoft Excel (.xls) file format.
